Events through the seasons

These are the events I put on myself — foraging walks, cookery sessions, demonstrations, and the occasional long table. Mostly around Hofgut LEO and the southern Black Forest, where I'm based for much of the year.

A foray is a walk with purpose. You learn to see what's actually there — the wild garlic, the sorrel, the hedgehog fungus you'd have walked straight past — and then we cook with what we find. No specialist knowledge needed. The point isn't to become an expert overnight; it's to start noticing.

The cookery side runs from informal demonstrations to hands-on skills sessions. I've taught cooking in a number of settings — from Jamie Oliver's Ministry of Food to informal training in kitchens, from vocational education to university seminars — and what I care about is the same whoever's in front of me: good technique, real ingredients, and the confidence to cook without a recipe.

And then there are the gatherings. A long table, a fire, food that came out of the morning's foraging. These happen when the season and the setting are right.
