I have extensive experience in establishments that prioritise using what is in season (at it's best) and local (fresh & sustainable), and this is a core skill and emphasis that I bring to my work.

From sustainable operational systems and practices to regenerative product sourcing I can help to increase both the impact and efficiency of these operational values.

Leadership not egoship

I have always believed that kitchens do not have to be toxic workplaces to be efficient or to excel. For a culture to begin to be regenerative

Another key area of expertise I offer is competence in many different cuisines, and have been developing the art of fusion - discovering principles that can maintain the integrity of cultures, and open up areas for creative play.
Again this I can offer both directly into food operations, or as a facilitative tool to help foster inter-cultural understanding and integration.
